MEXICAN Arroz Con Leche

Ingredients:

7 cups of water,

1 cup long-grain rice,

1 cinnamon stick (about 10 cm),

1 can (355g) condensed milk,

1 can (400g) sweetened condensed milk,

1 cup whole milk,

3/4 cup golden (or regular) raisins. Optional:

You can also add pineapple, coconut, and drained pecans (or other nuts of your choice; my friend added them for her own personal touch).

Instructions:

Place the water, rice, and cinnamon stick in a medium, heavy-bottomed saucepan and bring to a boil over medium-high heat. Cook uncovered for about 18 minutes or until the rice is tender. Drain the liquid, remove the cinnamon stick and set the rice aside. Return the rice to the saucepan. Stir in condensed milk, sweetened condensed milk, and whole milk. Return to a boil over medium-high heat. Reduce the heat to low and simmer uncovered, stirring constantly, for about 20 minutes or until thickened. Stir in raisins. Transfer the pudding to a platter. Sprinkle with ground cinnamon and serve.
